Eleven Bean Soup


1 Package Mixed Beans

1 Large Onion

1 pint Tomatoes or 6 oz Tomato Paste

1 lb Ham (Optional)

1/4 cup pearled Barley

Juice of 1 Lemon

Salt and Pepper to taste


  1. Wash beans. Put in kettle. Cover with water at 1 Tablespoon salt. Soak overnight.  Drain and rinse well.
  2. Bring 2 quarts fresh water to boil (with ham if desired) Simmer 2-3 hours.
  3. Add other ingredients. Simmer 30 minutes more.

Yield 5 quarts. Enjoy!

*Can be made in a crock pot too!
