Quinoa Salad

Quinoa Salad 

Ingredients :

Cook 1 cup of Quinoa (2:1 water to quinoa, simmer 15-20 minutes)

1 cup currants

1/2 cup pine nuts (or your choice of nuts)

1/4 cup chopped parsley

1 bunch chopped scallions

1 chopped red pepper

Dressing ingredients:

1/8-1/4 cup honey (1/4 will be pretty sweet)

1/4 cup olive oil

1/2 Tablespoon lemon juice

1 clove garlic

1/4 teaspoon cumin

salt and pepper to taste

Combine the first six ingredients.  Mix dressing ingredients well, pour over quinoa mixture and stir to coat.

**Variations

  • try using half quinoa and half rice, wild rice or another grain you like.
  • mix different colors of quinoa
