BBQ Tofu Subs
1 lb extra firm tofu, frozen and thawed for meatier texture (remove tofu from water before freezing)
1/2 cup of your favorite BBQ sauce
4 sub rolls
salt and pepper to taste
1 TBSP canola oil
veggies of choice, shredded carrot, lettuce, pickles, onions, avocado slices, etc
Squeeze any water out from the thawed tofu, then crumble into bite size pieces.
Sprinkle with salt and pepper
Heat the oil in a skillet over medium-high heat and quickly tos in the tofu to coat evenly.
Saute the tofu until browned, then stir in the BBQ sauce and remove from heat.
Toast the sub rolls if you wish, then prepare them with veggies and any desired condiments. (such at Roasted Garlic Vegenaise)
Pile on the tofu and serve ‘em up!
