Indonesian Rice Salad


2 cups short grain brown rice

Start cooking rice

Dressing ingredients:

1/3 cup peanut oil

3 TBSP toasted sesame oil

1/2 cup orange juice

1 medium clove garlic, crushed

1/2 tsp crushed red pepper flakes

2 TBSP tamari

1 tsp salt

2 TBSP honey

2 TBSP cider vinegar

1 cup chopped pineapple

Add hot rice to dressing, mix well

Then add:

2-3 minced scallions

1 stalk celery, finely minced

1/2 cup raisins or currants or dried cranberries

1/2 cup chopped roasted peanuts

1/2 cup toasted cashew pieces

2 TBSP sesame seeds

1 cup mixed red and green pepper, diced


Add other veggies you like such as thinly sliced water chestnuts, fresh snow peas, bean sprouts
